Siri Menu Simple 1

Ni resipi yang saya cuba beberapa hari lepas.

1 tablespoon olive oil
1 onion, sliced
¼ teaspoon chilli flakes
4 x 180g firm white fish fillets (used dory)
sea salt and cracked black pepper
3 ripe tomatoes, cut into thin wedges (used chunk tomato)
2 teaspoons finely grated lemon rind (used lime)
2 tablespoons chopped flat-leaf parsley leaves (used dried parsley)
1. Heat a frying pan over medium-high heat.
2. Add the oil, onion and chilli and cook for 3 minutes.
3. Sprinkle the fish with salt and pepper and cook for 4–5 minutes each side or until just cooked through.
4. Set aside and keep warm.
5. Increase the heat to high, add the tomato and lemon rind to the pan and cook for 3 minutes or until just soft.
6. Stir through the parsley. Place the fish on serving plates and top with the tomato mixture. Serves 4.

1 cup (200g) rice flour (used plain flour + rice flour)
½ teaspoon table salt
½ cup (125ml) coconut milk
½ cup (125ml) water
6 eggs, lightly beaten
2 green onions (scallions), chopped (used leek)

1. Place the rice flour, salt, coconut milk, water and eggs in a bowl and whisk until smooth.
2. Stir through the green onion.
3. Heat a lightly greased non-stick frying pan over high heat.
4. Pour ¹⁄³ cupful of the mixture into the pan and tilt to cover the base.
5. Cook for 1–2 minutes each side or until golden. Set aside and keep warm.
6. Repeat with remaining mixture. Serve with lemongrass prawns (see recipe). Makes 8.
